This black label cheese is made in the spring when rich milk is in abundance, this cheddar uses a special blend of four cultures created exclusively by our expert cheesemaking team.
  • To create the drier cheddar style of this cheese it is stirred vigorously while being heated to reduce moisture
  • After one year the cheese is checked and the finest examples are set aside for another year's maturation
  • Before leaving King Island these fine cheddars are coated with their namesake black wax to give them the black label finish
  • Its flavour is savoury, yet offers the suggestion of fruit - which the cheesemakers liken to pineapple
