- To create the drier cheddar style of this cheese it is stirred vigorously while being heated to reduce moisture
- After one year the cheese is checked and the finest examples are set aside for another year's maturation
- Before leaving King Island these fine cheddars are coated with their namesake black wax to give them the black label finish
- Its flavour is savoury, yet offers the suggestion of fruit - which the cheesemakers liken to pineapple
